Monosaccharides, also called simple sugars, are usually colorless, water soluble and crystalline solids. Glucose is the most abundant monosaccharide. It is made by plants and most algae during photosynthesis.

Galactose is a monosaccharide sugar that is about as sweet as glucose, and about 65% as sweet as sucrose. It is found in sugar beet, tree gums and seaweed.

Fructose is found in honey, tree and vine fruits, flowers, berries, and most root vegetables. Commercially, fructose is obtained from sugar cane, sugar beets, and corn.
